Lentils are protein rich. They lack only one protein, methionine. Adding grains, eggs, nuts, seeds, meat, dairy products, or eggs will provide a complete protein.
The lentil is a cousin of the bean, and both are a part of the legume family. All legumes are seeds that grow within pods. Lentils are shaped like a lens. In fact, lens is the Latin word for lentil.
Lentils are simple to prepare. Simply sort, remove any debris. Then rinse and boil for fifteen to twenty minutes. There is no need to soak lentils. Also, do not add salt to lentils while cooking; toughness may occur. Lentils are packed with nutrients, fiber, complex carbohydrates, and folic acid. Lentils are a low calorie, low fat and cholesterol free food as well as being inexpensive.
Dry peas are dried naturally by the late summer sun. They are most commonly split, which speeds cooking time. Americans are most familiar with green peas, but yellow peas are also grown on the Palouse.

Peas probably came from northwest Asia and some archaeologists think that people started growing peas and lentils more than 20,000 years ago.

  • Lentils, peas and chickpeas have been found in Egyptian tombs that were built over 4,000 years ago.
  • Peas have been found in caves in Thailand that are over 11,000 years old.
  • In the Bible (Genesis 25:34) Esau sold his birthright for a "pottage of lentils".
Check that the legumes you are using are from the United States. lentils peas, and chickpeas from other origins such as Canada, Turkey, and India have been known to have higher levels of foreign matter. In addition, products from these origins may take significantly longer to cook because of "hard seed" problems (a result of harvesting at higher moisture rates.) Lentils peas, and chickpeas from the United States are dried naturally in the sun and harvested only when completely mature.
