Pre -heat oven to 350 degrees. In a med. saucepan,
combine lentils
with 1½ c water bring to a boil. Reduce heat cover and simmer for 25
min. Drain. Combine sugar, cocoa, salt, flour, corn syrup, eggs, melted
butter, and vanilla in a lg. bowl and beat for 30 seconds at med. speed,
do not over beat. Stir in cooked lentils and chopped pecans.
Pour into pie shell and bake for 55-60 minutes. Immediately arrange
pecan halves on top and bake for 5 more minutes. For best flavor, cover
pie and let stand for 1 day before serving. |
