Melt butter in 3-quart saucepan, add rice and lentil and
cook for 1 min. Stirring. Pour in water and bring to a boil. Reduce heat
and simmer for 30 minutes In a skillet, cook onion in olive oil until
tender. Gently mix onion and lemon juice into rice and lentils. Season
to taste with salt and pepper. Let stand for ½ hour before serving. |
