Roman Split Peas

1-cup dry yellow and green peas 1/2 cup chopped basil
1 bay leaf salt and pepper to taste
21/2 cups water 2 medium tomatoes, sliced
2 tablespoons balsamic vinegar 6 oz mozzarella sliced
2 teaspoons minced garlic lettuce leaves
In a medium sauce pan combine peas, bay leaf, and water, bring to a boil. Reduce heat, cover and simmer 25-35 minutes or until peas are tender. Drain if necessary. Remove bay leaf. Toss peas with oil, vinegar, and basil to coat peas completely salt and pepper to taste. Serve warm or cold over tomatoes and mozzarella slices arrange on lettuce leaves.
