Heat oil in a 3-quart pan over med. heat. Cook onion,
bell pepper, and garlic in oil until tender. Stir in water, lentils,
tomato sauce and seasoning mix. Bring to a boil, reduce heat and simmer
partially covered for 35min. or until lentils are tender. Pre-heat oven
to 400. Grease a 3-quart dish
Mix all topping ingredients in a medium bowl until moistened. Spoon
lentil mixture into baking dish and spread topping evenly over the top.
Bake uncovered 15-20 minutes or until golden brown. Serve with sour
cream and salsa. |
